This report examines the restaurants industry in the UK. It forms part of the broader hospitality sector, a pillar in the national economy, which is comprised of markets that offer accommodation and meals and drinks in venues outside of the home, such as hotels and bars. It also includes catering, events management and agency employment, as well as related services.
The hospitality sector is the fifth-largest industry in the UK and contributes more than £50bn annually to the economy in gross value added (GVA). It directly employs approximately 2.7 million people across the UK, in addition to a further 1.2 million in indirect employment in the supply chain. In total, there are over 200,000 hospitality businesses in the UK, which play a fundamental role in leisure and tourism.
This report focuses solely on restaurant enterprises that offer sit-down' or eat-in' services for food and drink. Based on this definition, outlets such as takeaway venues, motorway service stations and coffee shops, are not covered in the analysis. The salad and sandwich chain Subway is also excluded from the report, due to limited seating areas at its sites. Moreover, the report does not deal with meals purchased as part of corporate catering services as it focuses specifically on meals consumed within the quick-service sector, in casual dining venues and in pub restaurants.
Only restaurants with the correct licence are legally allowed to sell alcohol for consumption on and off their premises. However, not all businesses in the industry have obtained this licence. As a result, Chapter 3 - Market Size, Segmentation & Forecasts - makes a distinction between these outlets and provides data for sales of both food and drink within each sector. Figures have changed since the previous edition of this report due to new data being produced by the British Hospitality Association (BHA).
